Beets

Tips for Care:

Water the beets thoroughly. Work the top 1” of the soil to aerate and prevent crusting. Thin beets if they grow closer than 2” - 3” apart.

Harvesting:

Beets are ready for harvest when they are the size of golf balls or larger. Larger, overripe beets will be tough and woody.

Pull the plant. Do not discard the tops as they may be used for greens.

Extras

Beet tops (leaves) are perfectly edible. They have a earthy flavor. They can be used in much the same way as kale, though their milder flavor may be more palatable to sensitive palates.
